We're Hiring: Line Cook

Early Mountain Vineyards has an immediate opening for a Line Cook in our culinary department. The ideal line cook must demonstrate the ability to efficiently and accurately cook meat, fish, vegetables, soups and other prepared products, as well as serve mandated portions. He or she must be able execute final plate preparation, including plating and garnishing of cooked items. Reports to the Executive Chef.  

The candidate should be extremely personable, well organized and a self-starter. The ideal candidate is someone who is doggedly enthusiastic, and radiates positivity while in a kitchen setting. Weekend availability is required. 

Essential Functions:

  • Arrive on time every day

  • Arrive dressed and ready for work

  • Arrive with a positive attitude and willingness to work

  • Learn and remain familiar with menu items and assume responsibility for all food rotation and proper timing of foods.

  • Alert, friendly and able to assist guests with courtesy and promptness. Familiar with a variety of the culinary field concepts and procedures.

  • All employees are responsible for maintaining proper HAACP protocol – holding and heating temperatures, FIFO, organization of station & walk in space.

  • Knows and complies with standard portion sizes, cooking methods, quality standards & rules, policies and procedures

  • Keeps a clean and sanitary work station, including all cooking equipment, tables, shelves and refrigeration equipment.

  • Inspect equipment before and after use, making sure everything is clean and in proper working order.

  • Review prep list, check daily pars and maintain pars as necessary, and ensure all food items are dated and up to company standards.

  • Prepare food of consistent quality by following recipe cards and production and portion standards

  • Follows all opening and closing checklists to ensure that kitchen is closed properly.

  • Treat each other with respect

  • Be ready to discuss new or improved plates at line up with wait staff

  • Assume 100% responsibility for quality of products served

  • Performs other related duties as assigned by Chef.


  • Minimum 2 years experience, or at least 6 months experience in a similar capacity.

  • Ability to communicate clearly and effectively with all personnel

  • Must be able to lift 40 lbs regularly, as well as bend, stoop and reach, as well as remain standing for as many as 12 hours.

  • Follow all recipes and plating specifications as directed

  • Maintain personal hygiene standards in accordance with Virginia State Health Standards for Food Service Employees

Working Environment:

  • Interior and on occasion, exterior with exposure to weather conditions.

  • Work will primarily take place in Early Mountain kitchens and throughout the entire property

  • Group and solo work

  • Practice and observe all safety procedures

  • Interior of building, in all areas with exposure to extreme temperatures.

  • Exterior of building with exposure to weather conditions.

  • Exposure to various hazardous chemicals.
