We will also be offering a special wine and cheese flight in our Market Place! ‍ Pinot Gris, 2012 Our Gris shares some of the same characteristics as its cheese partner: a "flagship" variety for Early Mountain which produces a more aromatic example of Gris, exhibiting creamy notes of lychee, papaya, guava and a bracing acidic finish. Paired With: Piedmont Tasting Notes:Piedmont is Everona Dairy's flagship cheese. Similar to manchego, but with an edible rind. Has special cultures to produce a more flavorful cheese. Nutty and sweet, with a distinctive, delicious after taste and fruity notes with a creamy texture. ‍ Viognier, 2011 If Viognier had a billboard, it would read: "like drinking fuzzy peaches, with a spicy honeysuckle finish." Our Viognier showcases these characteristics but is also encased by apricot pit, which like the rind of this cheese, complements the creamy peach-like core. Paired with: Pride of Baccus Tasting Notes:Our signature Piedmont cheese soaked in lees from Early Mountain Vineyards for a beautiful rind with a smooth texture in the center. The nutty flavor of the cheese mixes well with the fruitiness of the wine. ‍ Block 11, 2012 Mandarins, orange blossoms, pineapples...this white blend of Petit Manseng and Muscat will bring you to the tropics. But, just as you are settling into its lush fruitiness, your palate will surrender to a lingering sharp acidity that will penetrate the smokiness of this cheese. The pairing will leave you wondering if you are on a tropical volcanic island. Paired With: Smoked Piedmont Tasting Notes:Our Piedmont cheese that is hickory smoked to create a mild smoky rind that complements the creamy, nutty , fruity flavor of the cheese. ‍ Muscat Dolce, 2009 A dessert wine, like orange marmalade, not too cloying but begging for a creamy acidic companion. Paired with this milder version of blue, creamy, yet tinged by the acidity of a sheep's milk, Dolce's orange-like sweetness finishes on a more citrusy, nuttier note; and the cheese's encore sings more blues. Paired with: Skyline Blue Tasting Notes:Skyline is a camembent-style on the inside, blue on the outside. Its shelf life is not as long as the harder cheeses but the is addicting! At room temperature the cheese gets runny and creamer.
