We are thrilled to announce the long-awaited release of our 2022 Petit Manseng. Exceptionally layered, this dry Petit Manseng showcases a dynamic and harmonious blend of flavors and textures. Notes of grilled pineapple, ripe stone fruits, bright lemon curd, and hints of dried fruits are complemented by a subtle undertone of brioche and baking spice.&nbsp;&nbsp;Fermented in primarily large format barrels (500L to 1000L), our Petit Manseng undergoes a long, very slow, ambient fermentation process. This technique ensures ample contact with the lees, crucial for developing the wine's complexity and depth. A key feature of our process is the use of our “perpetual lees” barrel, which has been continuously active since 2017. This innovative approach involves adding lees from previous vintages to new ferments, enriching the wine with a rich, champagne-like brioche undertone that enhances its overall character.
